Big Al’s BBQ and Catering Services LLC was formed in 2008 with the premise that BBQ is better when cooked on wood. With that idea in mind, Big Al’s began cooking pork, ribs, chicken and beef brisket on a 32ft. mobile kitchen with an Ole Hickory Smoker mounted on the back where all meats are smoked on hickory wood. The mobile kitchen has refrigeration, freezer, warming cabinet, Health Department required sinks, three 40lb. double basket fryers, char-broil grill, steam table, heating & air, fresh water tank. waste water tanks and on board generator which gives us the ability to travel to different places and prepare food on the spot.
Pork BBQ is cooked for 12 to 14hrs, ribs and chicken 5 to 6 hrs and beef brisket 16 to 18 hrs.
Hushpuppies are made fresh daily. Vegetables are cooked fresh when Big Al’s mobile kitchen shows up for a festival or catering event. Aside from the BBQ items, Big Al’s can cook char-broiled burgers, steaks, hot dogs, chicken or fish and with three double basket fryers, an array of fried items can be cooked on site.
Big Al’s is permitted by the Wake County Health Department and can travel to any City, Town or County in North Carolina for one day at a time using this permit. Any event over one day requires a special TFE permit from County in which event is being held.
Big Al’s strives to provide as many NC products as possible. Some of those are George’s Sauces of Nashville, Vernon McLamb’s BBQ Sauce of Benson, Smithfield Pork of Tar Heel, Allen Beans of Warsaw, Franklin Baking of Goldsboro and Prestige Farms Chicken of Charlotte.
When catering or attending festivals, all set ups and logistics are handled by Elizabeth Carter so that the food and beverage flows smoothly and properly from the kitchen to the table so that correct serving temperatures and freshness are maintained for our customers.
In closing, Big Al’s is not going to be your cheapest BBQ vendor for a catering event but we guarantee that we will provide you with the freshest and tastiest products that you can get from any BBQ vendor in Central and Eastern North Carolina.
